Paella Soup

Inspired by the classic Spanish rice dish of the same name, highly seasoned smoked chorizo, savory shrimp, a host of fresh vegetables and short grain rice are simmered together to make this flavorful and authentic Spanish soup.

This soup pairs very well with prosciutto wrapped asparagus and a glass of Sangria.

Ingredients 

Paella broth, Spanish chorizo, shrimp, chopped tomatoes, orange peppers, red bell peppers, onions, carrots, La Bomba rice, bay leaves, cumin, paprika, oregano.

Garnishing options

Lemon slices and cilantro.

Reheat soup on medium low on the stovetop as to not overcook the proteins or rice.
